New Ice Cream
Hello all, today I am going to share a recipe that i discovered over the holiday weekend. Now its not a traditional ice cream as far as local available products but it is a great way to utilize some stuff in the house with out having to throw it out. Now this is based off of my bananas foster recipe, but in changing it I found a better flavor, texture and look of my ice cream, so here is the recipe.
Banana Bread Ice Cream
Ingredients
3 cups of heavy cream
1 cup butter milk
3-4 bananas cut into quarters
3 oz of butter
2/3 cup of sugar
6 egg yolks
1 cup pineapple chunks
1/2 pineapple juice
1/2 tsp cinnamon
1/8 tsp allspice
1/8 tsp nutmeg
steps
1. Combine butter milk and heavy cream into a non-reactive pot and slowly bring up to 187 F degrees.
2. Melt butter in a pan over medium heat. Once butter begins to brown ( you will start to see the fat start to "spit" that will be the water evaporating out of the butter ) add the banana to the pan still over medium heat.
3. Sift spices over the bananas after turning them. the bananas should have a dark brown color to them.
4. Combine yolks and sugar and mix together and set aside.
5. Once bananas are brown on both sides place in refrigerator to cool. When cooled combine with pineapple and pineapple juice into a food processor and blend until smooth.
6. temper the yolks with the cream, then add banana mixture to ice cream base. Place in refrigerator and chill until it reaches 40 F.
7. Pour into ice cream maker, duration of time depends on the machine and manufacturer.
8. Once the ice cream has formed, enjoy.

Note:
I forgot to add a ingrediant to the recipe and a procedure. Sorry.
3 oz dark rum
deglaze the bananas with the rum. Cook until reduced by 1/3.
